Characteristics of The Windowpane Oyster Flour Mineral Content (Placuna placenta Linnaeus, 1758)

Abstract

There are not many people in South Sulawesi who use scallops optimally. Windowpane oyster have potential nutritional content, generally bivalves shells consist of a fairly complete mineral composition and high calcium carbonate content. This study aims to determine the percentage of mineral content (calcium, magnesium, potassium, sodium and phosphorus) in windowpane oyster flour (Placuna placenta Linnaeus, 1758) based on size correlation. The number of samples obtained was 215 individuals for 6 sampling times from June to August 2020 in the waters of Lantebung Beach, Bira Village, Tamalanrea District, Makassar City. Shell morphometric measurements and analysis of mineral content testing using the wet digestion method were carried out at the Water Productivity and Quality Laboratory, Department of Fisheries, Faculty of Marine Affairs and Fisheries, Hasanuddin University. Analysis of morphometric data into three classes based on size, namely 111–128 mm for small shell size, medium size 129-146 mm and large shell size class, 147-163 mm. The ANOVA results showed that the size of the windowpane oyster had a significant effect on excessive mineral content. Shell length range of 129–146 mm (medium shell size) has the highest mineral content compared to other sizes, so it is efficient to use at this size.
